Steve Jayson, a graduate of the Culinary Institute of America, has been an integral part of the success of Universal Orlando since he began in February of 1989. As vice president, corporate executive chef for the Universal Parks and Resorts, Chef Jayson has not only delivered an incredible level of culinary expertise and customer service to all of our guests over the years, but has been recognized by his peers for his contributions to his profession.

Chef Jayson is responsible for research and development of all menu items and food product planning, control and quality for food venues in Universal Studios, Universal CityWalk, Islands of Adventure, as well as Universal Studios Japan and Universal Studios in Hollywood, CA.

Chef Jayson and his culinary team have been instrumental in developing an incredible menu for Three Broomsticks, the restaurant located within Hogsmeade in The Wizarding World of Harry Potter. In addition to developing the recipes for Butterbeer and pumpkin juice, Chef Jayson created menus for breakfast, lunch and dinner that include some authentic-to-fiction items, such as Cauldron Cakes, Treacle Fudge and Rock Cakes. He and his team also created delectable versions of traditional English menu items that can be found at The Wizarding World of Harry Potter, such as trifle and black pudding.

A 1974 graduate of the Culinary Institute of America, Chef Jayson became associated with the American Culinary Federation in 1976 and in his 36 years of experience has received over 150 culinary awards from various organizations. He has been featured in Nation’s Restaurant News, Food Management, Restaurant Hospitality, had original recipes published in Gourmet and Esquire Magazine and appears regularly on Central Florida television stations demonstrating some of his finest cooking techniques.

In the year 2000, The American Culinary Federation awarded Chef Jayson “National Chef of the Year.” Chef Jayson’s award was based on peer evaluations from 245 country wide chapters.

Chef Jayson has been instrumental in expanding the food service operation to meet Universal’s growth and continues to be responsible for the development of all menu items, food product planning and quality control for the more than 80 food venues at Universal Orlando.
